Balduf started Side Biscuit during the pandemic, from his driveway and later grew into pop-ups around Ann Arbor. In 2021, he finally established a physical location on Packard Street.

The experienced chef honed his culinary skills at various Michelin Star and James Beard restaurants, allowing him to craft unique wing sauces using high-level techniques.

The top-selling item at Side Biscuit is the OG Buffalo made with Frank’s RedHot and butter, closely followed by the sweet and spicy Gucci Gang sauce, made with gochujang.

“We keep the OG Buffalo simple, creamy, acidic with a little spice,” Balduf explained. “Our wings are fried longer for extra crispiness but remain juicy inside.”

The traditionalist chef avoids boneless, breaded wings, or serving with ranch, considering these as taboo in his establishment. Alongside wings, the restaurant also offers salads, fries, a chicken finger sub, and pork rinds.

Balduf keeps customers intrigued with weekly wing flavors and alternating “side biscuit” flavors. Inspiration for these flavors often comes from collaborations with other local businesses. Upcoming specials are available for the Super Bowl on Sunday, Feb. 11.

The Super Bowl menu features collaborations with Detroit businesses like Pierogi Queen and Aunt Nee’s, offering buffalo chicken pierogis and take-and-bake chicken wing dip served with Aunt Nee’s tortilla chips. Pre-orders for the Super Bowl end on Saturday, Feb. 10.
